The savoury galette is a Breton buckwheat pancake — thin, crisp at the edges, folded into a square around its filling.
We mix the buckwheat batter the day before and let it rest. It is cooked on a cast-iron griddle — the billig — spread thin, brushed with Sel de Guérande butter and folded around a warm filling. No wheat, no shortcuts.
