
Gluten-free
For coeliacs and people with gluten intolerance, this is not a supplement or an exception. Buckwheat is the foundation of the Breton galette and of our kitchen.
Every savoury galette at Saint Paul is made from 100% buckwheat flour — no wheat, naturally gluten-free.
The Breton galette is traditionally made from buckwheat (sarrasin). We do the same: our savoury galettes are mixed from buckwheat flour alone. Buckwheat is not a cereal grain and contains no gluten.
Sweet crêpes are made with wheat flour by default. On request we prepare them in a buckwheat, gluten-free version — just ask when you order.
We also work with wheat flour in the kitchen (for sweet crêpes), so we cannot guarantee an environment entirely free of gluten traces. If you have diagnosed coeliac disease, please tell our staff — we will go through the dish with you and prepare it with the greatest care.
